How To Make Rice Salad In Microwave

Traditional cold rice salad is considered fast food in Italy, used for picnics and lunches on the go. Add a few drops of your favorite hot pepper sauce for a dash of spice if you like. Many Italians add a few tablespoons of mayonnaise at the end.


  • 1 cup boiled Rice
  • ½ cup Cucumber (chopped)
  • ¼ cup Tomato puree
  • 1 tbsp. Onion (chopped)
  • 2 cloves Garlic (crushed)
  • 1 green Chilli (chopped)
  • Few curry leaves
  • 2 whole red Chillies
  • 1 tbsp. Olive oil
  • 1 tsp. Vinegar
  • 1 tsp. Mustard seeds
  • ¾ tsp. Basil leaves
  • 1 cup Curd
  • Salt & white pepper

  1. Place garlic, curry leaves, whole red chili, olive oil, mustard seeds in a microwave for 2 mins. at 100% power.
  2. Add boiled rice, chopped cucumber, tomato puree, chopped onion, green chili, salt, curd and microwave for 2 mins. at 100% power.
  3. Add vinger, basil leaves, salt & pepper toss well. Garnish with chopped fresh coriander.


Chef’s Tip: Serve chilled or hot. Paneer strips can be used.
